I have been using this unique combination to create dishes that look spectacular and taste fabulous for my family for over 20 years and will share some of these treasures with you through a weekly column on TFN.
This week’s innovation is Millet Flat Bread Pizza
Millets are gluten-free superfoods and full of fiber – easy to digest and extremely nutritious. This is why I use millets a lot in my recipes.
Today I am sharing an easy-to-make healthy and tasty millet recipe that your family will surely love! I recommend it especially for kids as a healthy pizza alternative.
Recipe of Millet Flat Bread Pizza
Flatbread ingredients
1 cup Pearl millet flour ( bajra flour)
1/2 cup hot water to knead
Topping ingredients of pizza
1 avocado
1 tomatillo ( raw green tomatoes) steamed and de-skinned /peeled and puréed
2 green chilies chopped
4-5 whole garlic pods skin removed and roasted
Salt to taste
A handful of cherry tomatoes cut into halves
Basil leaves
Sumac to sprinkle
Method – flatbread
In a bowl take the flour and add the hot water
Mix it slowly to form a pliable dough
Knead it a couple of times till it’s smooth and can be rolled into a flatbread/roti
On a hot tava /flat griddle roast the rolled out roti cooking on both sides
Method – topping
Peel the avocado and de-seed it
Mash it in a bowl
Add the puréed tomatillo, salt , green chillies .
Spread this over the bread evenly but thickly
Add the whole roasted garlic
And the cherry tomatoes
Bake it in a preheated oven for 10 mins
Cut it into slices
Add the basil and the sumac powder and serve
Enjoy this gluten-free pizza !!
