I combine my understanding of ingredients and international cuisine, and my own exclusive technique to create gourmet dishes potato brick, that is truly healthy (vegan, gluten-free, almost no oil) that would be relished by Indian palates. I have been using this unique combination to create dishes that look spectacular and taste fabulous for my family for over 20 years, and will share some of these treasures with you through a weekly column on Heatlthy Goodies Blog
This week’s innovation is Potato Brick
Almost everyone loves potatoes – especially when they are deep fried (which is sadly not healthy)!
However, when not deep fried this starchy vegetable can be very healthy to consume.
Un:guilt always brings you something amazing on the plate, and staying true to that promise today I am presenting the humble potato glorified into a gourmet dish. Made into a brick and topped with mixed peppercorns and almonds !

Recipe
Ingredients
1/2 kg baked potato steamed and peeled and grated into a mash
2 cloves of garlic, grated
Salt to taste
Topping
2 tbsp Red pepper corn lightly crushed
2 tbsp Black pepper corn lightly crushed
1 tsp black sesame seeds toasted
1/4 cup Slivers of almonds
5 cloves chopped garlic
2 tsp soy sauce
1 tbsp rice vinegar
5 tbsp chopped chives
Method
Heat a griddle add rub 1 tsp oil to it
In a bowl mix the mashed potato salt and garlic with light hands , making sure it’s not getting gooey.
Form like a thick 2”x4”brick and roast it on the hot griddle till it’s crisp on all four sides !
In a pan dry roast the chopped garlic till it’s toasted and crisp ,then add the crushed peppers, sesame, the soy sauce and the vinegar .
If you like it you can also add finely chopped red chillies
Remove from the pan
Platting
In a flat serving dish place the grilled potato brick
Spread the topping over it
Add the slivered almonds and the chives
Serve this with crackers / khakras !
