Thai glass noodle salad recipe

Our guest foodie today is from Korat, Thailand (Korat is a town roughly 200 km from Bangkok). Ms. Nueng who is currently working as a marketing executive in a leading insurance company in Thailand had always wanted to follow her passion for cooking (to which she was first introduced at the age of 9 yrs by her grandma) and finally, she decided to do something about it. She joined a prestigious culinary school named Dusit Thani College in Bangkok last October and graduated this August (yes, in the midst of the pandemic). It is a testament to this young lady’s focus and dedication that for an entire year she would drive 400 km (7 hours) every weekend from Korat to Bangkok and back, to fulfill her dream. She came up with a Thai Glass Noodle Salad Recipe.

Ingredients for Thai Glass Noodle Salad (for 2 portions)

80 g Dried glass noodles soaked in water for 8-10 mins 
20 g Dried shrimp – boil for 5 mins
30 g Chicken/Pork minced – boil for 5-7 mins
40 g Tomatoes cut in pieces
20 g Onion sliced
2 TBSP chopped Garlic
2 TBSP Coriander or celery, cut 1 inch long
½ TBSP Pickled garlic chopped
½-1 TBSP Chili chopped
3 TBSP Oil
2 TBSP Peanut roasted (optional)

Sauce

½ TBSP Pickled garlic water
1 TSP Sugar
2.5 TBSP Fish sauce (you can buy on Amazon)
2.5 TBSP Lime juice

Method for Thai Glass Noodle Salad

Mix the sauce ingredients together in a mixing bowl.
Heat the oil in a frying pan and put some garlic in. Fry the garlic until it turns yellow in color. Remove and keep aside in a cup
Bring water to a boil in a saucepan and cook the glass noodles in it for 3 minutes. Rinse off the water and mix in the garlic and oil.
In a mixing bowl, mix glass noodles, pork mince, dried shrimp. Then add tomatoes, onion, pickled garlic, and chili.
Garnish with coriander and peanut (if using)
Your salad is ready to be served.
